Healthy Oven-Roasted Fish




When buying whole fish, choose ones with clear eyes. These branzinos are about one-pound each. All you need is a lemon, some parsley and, of course, olive oil, sea salt and pepper. Have the fish counter thoroughly scale them, you can have them cut the head and tail off, but keep the bones. Preheat oven to 425°F, brush fish with olive oil and season with salt and pepper, inside the cavity and out. Put on a lightly oiled, or lined, baking tray. Place a few slices of lemon and a few sprigs of parsley in the cavity. Bake for 20 minutes. Let rest for ten minutes before serving. The fish was moist and buttery.
